Amount Ingredients
2 lbs. Butter, Lightly Salted
2 lbs. All Purpose Flour
12 oz. Custom Culinary® Gold Label Chicken Base
3 gal. Water
1 lb. Onions, Diced
1 lb. Carrots, Julienne Cut
1 lb. Celery, Diced
1 lb. Green Peppers, Diced
1 cup Parsley, Chopped
12 Apples, Cored, Grated
1 # 10 can Tomatoes, Canned, Diced in Juice
1 tsp. Clove, Ground
1/2 cup Madras Curry Powder
1 tsp. White Pepper
4 lbs. Chicken, Cooked, Medium Diced
PREPARATION

  1. In a 10 gallon steam jacketed kettle or 8 gallon sauce pot, melt butter over medium high heat. Add onions, carrots, celery, and peppers. Saute over medium heat 5-7 minutes, stirring frequently.
  2. Gradually add flour mixing well with a wooden spoon or paddle. Cook over medium heat 3-5 minutes, stirring frequently.
  3. Add water, Custom Culinary® Gold Label Chicken Base, parsley, apples, tomatoes, clove, curry powder and white pepper. Heat to boiling. Reduce heat and gently boil 35-45 minutes, stirring frequently.
  4. Add chicken, mixing gently. Heat to boiling. Reduce heat and gently boil 7-10 minutes, stirring occasionally.
