Amount Ingredients
4 oz. Butter, Lightly Salted
8 oz. Onions, Medium Diced
1-3/4 gal. Water
2 (20-oz.) bags Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter
12 oz. Custom Culinary® Gold Label Chicken Base
1-3/4 gal. Milk
8 lbs. Potatoes, Diced
4 lbs. Corn, Frozen
1 cup Parsley, Chopped
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle melt butter over medium heat. Add onions. Sauté over medium heat 3-5 minutes, stirring frequently.
  2. Add water and Gold Label Chicken Base, mixing well. Gradually add Whisk & Serve® Cream Soup & Sauce Starter, stirring constantly with a wire whip. Add milk, mixing well. Heat to boiling, stirring constantly. Reduce heat to a gentle boil.
  3. Add potatoes, corn and parsley. Heat to boiling, stirring frequently. Reduce heat and gently boil 12-15 minutes or until potatoes are tender, stirring occasionally.
