What You'll Need

Yield: 2 gallons

Amount Ingredients
12 oz. Butter
10 oz. Onions, Fine Diced
2 oz. Celery, Fine Diced
12 oz. All-Purpose Flour
1 Gallon Water
6 oz. Custom Culinary® Gold Label Clam Base, No MSG Added
1 oz. Custom Culinary® Gold Label Pork Base, No MSG Added
1 51 oz. can Chopped Sea Clams, Canned
3 lbs. Potatoes, Medium Diced
1/2 Gallon Cream, Half and Half
PREPARATION

  1. In a 4 gallon stock pot over medium high heat, melt butter. Sauté onions and celery 2-3 minutes until onions are translucent.
  2. Add Flour, blend completely.
  3. Add water, Clam and Pork Base, blend thoroughly with a wire whip to eliminate lumps. Add clams and potatoes. Heat to boiling. Reduce heat and simmer 10 - 12 minutes. (Do not overcook potatoes).
  4. Finish with Cream, simmer 2-3 minutes.
