Amount Ingredients
2-1/2 cups Water
2-1/2 Tbsp. Custom Culinary® Gold Label Mirepoix Base
10 oz. Couscous, Instant Style
4 Tbsp. Vegetable Oil
2 cups Apples, Peeled, Seeded, Medium Diced
4 oz. Figs, Dried, Re-Hydrated in Hot Water, Cut in Half
1/4 cup Lemon Juice, Fresh
1 tsp. Cumin, Ground
1 tsp. Coriander, Ground
1 tsp. Cinnamon, Ground
1/2 tsp. Kosher Salt
1/2 tsp. Black Pepper, Cracked
1 cup Red Onions, Chopped Fine
2 Tbsp. Sage, Fresh Chopped
2 Tbsp. Parsley, Italian
2 Tbsp. Lemon Zest
PREPARATION

  1. In a 1 gallon saucepot, over medium high heat, combine water and Gold Label Mirepoix Base. Bring to a boil.
  2. Add couscous. Blend, turn off heat, cover until liquid is absorbed. Fluff with a fork.
  3. In sauté pan over medium high heat, saute apples and figs in 2 Tbsp. oil for 1 minute until slightly tender. Set aside.
  4. In a small bowl, using a wire whip, combine lemon juice, 2 Tbsp. oil, cumin, coriander, cinnamon, salt and pepper until well blended.
  5. Using a rubber spatula, gently fold apple mixture, spice blend, onions, sage, parsley and lemon zest with couscous until well blended.
