Yield: 5 gallons

Amount Ingredients
7 lbs. Split Peas, Dry
1 lb. Custom Culinary® Gold Label Ham Base
4 gal. Water
2 lbs. Onions, Diced
2 lbs. Carrots, Diced
1 lb. Celery, Diced
6 Bay Leaves
1 Tbsp. White Pepper, Ground
2 lbs. Ham, Diced
PREPARATION

  1. In a 2 gallon sauce pot, wash peas thoroughly in cold water, drain. Cover with fresh water and soak overnight. Drain.
  2. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle add water and Custom Culinary® Gold Label Ham Base. Heat to boiling, mixing well.
  3. Add onions, carrots, celery, peas, bay leaves and white pepper, mixing well. Heat to boiling. Reduce heat to simmer, gently boil 1 hour or until peas are mushy, stirring occasionally.
  4. Add ham. Heat to boiling for 5 minutes, stirring frequently.
