Hearty Chicken Soup with Ancient Grains

A robust combination of hearty flavors that bring warmth anytime of the year. Featuring Custom Culinary® True Foundations Chicken Base, Hearty Chicken Soup with Ancient Grains consists of purple carrots, onions, celery, chicken, red barley, farro, chickpeas, micro greens, and flat leaf parsley.

Amount Ingredients
4 Tbsp. Vegetable Oil
1-1/4 cups Purple Carrots, Small Sliced
1-1/4 cups Carrots, Small Sliced
2 cups Onions, Small Diced
1-1/4 cups Celery, Sliced
2 ½ qts. Water, hot
2-1/2 Tbsp. Custom Culinary® True Foundations Chicken Base
1 lb. Chicken, Boneless, Skinless, Rough Cut Medium Size, Cooked
1-1/2 cups Red Barley, Cooked, Warm
1-1/2 cups Barley or Spelt, Cooked, Warm
1-1/2 cups Farro, Cooked, Warm
2 cups Chick Peas, Cooked Tender or Canned & Drained
1/8 cup Fresh Flat Leaf Parsley, Rough Chopped
1 Tbsp. Fresh Ground Black Pepper
1-1/2 cups Micro Greens
PREPARATION

  1. In a 2 gallon Sauce Pot over Medium High Heat, warm oil and sauté Carrots, Onions and Celery 2-3 minutes until tender.
  2. In a separate 2 quart container blend hot water and True Foundations Chicken Base and whisk until fully dissolves. Add to sautéed vegetables, add cooked chicken meat, bring to a boil, reduce heat to simmer and cook 5-10 minutes.
  3. To Serve: In a 12 oz. soup bowl, place 1 Tbsp. of each grain and chick peas. Piled in the center
  4. Add hot vegetable Chicken Broth around edges taking care to keep the Grains visible in the center of the bowl.
  5. Garnish at the last minute with chopped flat leaf parsley, ground black pepper and micro greens.
