Lemon Tarragon Chicken Cutlets

3 cups Custom Culinary® PanRoast® Chicken Gravy, Prepared, Hot
2 oz. Lemon Juice, Fresh
2 Tbsp. Lemon Zest, Fresh
4 Tbsp. Tarragon, Fresh, Chopped
2-1/2 lbs Parmesan Risotto, Prepared, Hot
1/2 cup Custom Culinary® Gold Label Wild Mushroom Tapenade
60 pcs. Asparagus, Small, Fresh, Olive Oil and Seasoned as Desired, Grilled, Hot
24 ea. 3 oz. Panko Parmesan Crusted Chicken Breast, Boneless, Skinless Medallions, Pan Seared or Baked Golden, Hot, Prepared
PREPARATION

  1. In a medium sauce pan over medium high heat, blend chicken gravy, lemon juice, lemon zest and tarragon. Heat 2-3 minutes. Stir frequently. Remove from heat and hold.
  2. In a medium sauce pan or large sauté pan, blend hot prepared risotto and the Gold Label Wild Mushroom Tapenade to your taste. Blend thoroughly.
  3. Place 4 oz. of prepared hot mushroom risotto on a plate, add 5-6 pieces of grilled asparagus.
  4. Layer 2 hot panko parmesan crusted chicken cutlets.
  5. Top with 2 oz. Lemon Tarragon flavored Chicken Gravy.
