Cornmeal Crusted Catfish with Brown Butter

Amount Ingredients
2-1/2 cups Custom Culinary® PanRoast® Pork Flavored Gravy
2 oz. Brown Butter, Prepared Warm
2 oz. Lemon Juice, Fresh
2 Tbsp. Lemon Zest, Fresh
1/4 cup Capers, Canned, Drained
24 ea. 3 oz. Cornmeal Crusted Boneless Skinless Catfish Fillets, Baked or Fried, Hot
PREPARATION

  1. In a medium sauce pan over medium high heat, combine prepared gravy, brown butter, lemon juice, lemon zest and capers. Heat 2-3 minutes until hot. Stir to fully blend.
  2. Place 2 ea. hot prepared catfish fillets in the center of your entrée plate.
  3. Drizzle with 1.5 oz prepared flavored gravy or to keep fish crisp, place gravy in a small side ramekin for dipping.
  4. Serve with fried okra, collard greens and smoked pickles.
