  Marinated Chicken
1/4 cup Custom Culinary® Gold Label True Foundations Chicken Liquid Stock Concentrate
2 Tbsp. Custom Culinary® Master's Touch® Southwest Flavor Concentrate
2 Tbsp. Custom Culinary® Master's Touch® Ancho Flavor Concentrate
3 Tbsp. Fresh Lime Juice
1 cup Olive Oil
4 lbs. Chicken Thighs, Boneless, Skinless
  Prepared Cole Slaw
8 oz. Custom Culinary® Jalapeno Relish
1/2 cup Cilantro, Fresh, Chopped
2 Tbsp. Lime Juice, Fresh
  Topping
2-1/2 cups Greek Yogurt, Plain
3 Tbsp. Red Chili Garlic Sauce Paste
PREPARATION

  1. In a medium mixing bowl, combine Gold Label True Foundations Vegetable Liquid Stock Concentrate, Master's Touch® Southwest Flavor Concentrate and Ancho Flavor Concentrate with lime juice and olive oil. Blend thoroughly.
  2. Add chicken thighs and toss to coat evenly. Cover and refrigerate for at least 1 hour or overnight for ideal flavor infusion.
  3. Grill or bake the marinated chicken until 165°F internal temperature, remove and pull apart or dice and hold hot for service.
  4. For the coleslaw, in a mixing bowl, blend prepared cold slaw mixture, Jalapeno Relish and lime juice. Toss evenly and keep chilled.
  5. For the topping, in a small bowl, blend plain Greek yogurt, red chili garlic paste and lime juice.
  6. To assemble each taco, use your favorite 5-6" corn or flour tortilla, add 2 oz. hot chicken, 2 oz. coleslaw mixture and 1 oz. drizzle with yogurt topping.
