Queso Birria Tacos with Consommé Dip
Featuring Custom Culinary® True Foundations® Beef Birria Broth
Crispy griddled corn tortillas filled with shredded beef birria and melted cheese, served with a rich side of True Foundations® Beef Birria Broth for dipping. A dunk-worthy taco experience packed with deep flavor.

What You'll Need
Yield: 2 tacos
2 ea 4–6” corn tortillas
½ cup shredded beef birria (see prep below)
½ cup shredded Oaxaca or mozzarella cheese (or cheese blend)
1 Tbsp chopped white onion (optional)
1 Tbsp chopped cilantro (optional)

Custom Culinary® True Foundations® Beef Birria Broth
(hot, for dipping)
1–2 tsp True Foundations® Beef Birria Broth (for brushing tortillas)
Optional: lime wedge for serving
Shredded Beef Birria (Batch Prep):
2 lbs slow-cooked beef chuck or brisket, shredded
1½ cups True Foundations® Beef Birria Broth
PREPARATION
Simmer shredded beef in the broth until fully coated and warmed through. Hold hot for service.
Brush the tortillas lightly with Beef Birria Broth on both sides.
Heat a griddle or flat top to medium-high. Place the sauced tortillas on the surface and let them crisp slightly.
Add a layer of cheese to half of each tortilla and let it melt slightly.
Top with shredded beef birria, then fold the tortilla into a half-moon shape and press lightly. Cook until golden and crispy on both sides, flipping as needed.
Garnish (optional): Add chopped onion and cilantro inside or on top of the tacos after cooking.
Serve with a 4 oz portion of hot True Foundations® Beef Birria Broth in a small cup for dipping.
