1. Preheat your oven to 400°F.
2. Place three flatbreads on a parchment-lined baking sheet.
3. Spread 1/4 cup of sauce evenly on top of each flatbread.
4. Sprinkle 1/4 cup of cheese over each flatbread.
5. Add 1/4 cup of sliced sweet potatoes on top of each flatbread.
6. Bake the flatbreads in the preheated oven for 3-5 minutes, or until the cheese is melted, golden brown, and delicious.
7. Once baked, sprinkle the flatbreads with cilantro.
8. Carefully remove them from the oven and cut each flatbread into approximately 36 small portions.
If sweet potatoes don’t work, add your favorite roasted root vegetable. You can also substitute mozzarella with any lighter cheese, such as Monterey Jack.
